✨Hash Brown Casserole Cups✨ (one of my favorites)

Ingredients:

  • 26 oz bag of frozen hash browns, partially thawed and patted dry (mine were still a bit cold)
  • 4 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 1 cup shredded cheese
  • Seasonings of your choice: I used garlic powder, onion powder, ranch seasoning, salt, and pepper
  1. In a large bowl, combine the thawed hash browns.
  2. Incorporate 4 tablespoons of mayonnaise, 3 tablespoons of sour cream, 1 cup of shredded cheese, and your chosen seasonings to taste.
  3. Generously spray oil in a muffin pan.
  4. Spoon in the hash brown mixture, pressing down slightly.
  5. Bake at 400 degrees Fahrenheit for 35-45 minutes, positioning the pan near the bottom of your oven. If the cups do not release easily after baking, extend the baking time slightly.
  6. Garnish with sour cream, bacon, green onions, etc.
  7. Enjoy!

To calculate the Weight Watchers points, we need to consider the points for each ingredient:

  • 26 oz bag of frozen hash browns: Approximately 22 points
  • 4 tablespoons mayonnaise: Approximately 14 points
  • 3 tablespoons sour cream: Approximately 3 points
