  • 2 cups grated zucchini
  • 1/2 cup chocolate chips (optional)


  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, whisk together oil, sugar, eggs, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and whisk until just combined.
  5. Stir in the grated zucchini and chocolate chips, if using.
  6. Fill muffin cups batter evenly.
  7. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
