Salmon and Shrimp Alfredo
Ingredients:
- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 2 salmon fillets, skin removed and cut into chunks
- 1 cup shrimp, peeled and deveined
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Directions:
- Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add salmon and shrimp, seasoning with salt and pepper. Cook until the seafood is just done, about 4-5 minutes. Remove seafood from the skillet and set aside.
- In the same skillet, melt butter and add minced garlic. Sauté for 1 minute until fragrant.
- Add heavy cream and bring to a simmer. Reduce heat and stir in grated Parmesan cheese until the sauce thickens.
- Return the cooked seafood to the skillet with the sauce. Toss to coat evenly.
- Serve the seafood and sauce over the cooked fettuccine. Garnish with chopped parsley.
