Here’s a recipe for strawberry mousse in a glass:


1 pound fresh strawberries
½ cup granulated sugar
1 tablespoon lemon juice
1 ½ cups heavy whipping cream


Hull and halve the strawberries.
In a blender or food processor, purée the strawberries, sugar, and lemon juice until smooth.
In a separate bowl, whip the heavy whipping cream to stiff peaks.
Gently fold the strawberry purée into the whipped cream until just combined.
Divide the mousse between serving glasses and refrigerate for at least 1 hour before serving.
You can garnish with fresh strawberries or whipped cream if desired.


For a richer mousse, you can fold in ⅓ cup of softened cream cheese to the whipped cream before folding in the strawberry mixture.
If you don’t have fresh strawberries, you can use 1 cup of frozen strawberries that have been thawed and drained.
