Strawberry Poke Cake recipe with WW point
Here’s a recipe for a Weight Watchers-friendly Strawberry Poke Cake with estimated SmartPoints values:
Lightened-Up Strawberry Poke Cake (approx. 4 SmartPoints per serving)
Ingredients:
Cake:
1 (16.5 oz.) package of Duncan Hines Sugar-Free Yellow Cake Mix (or similar brand) – 4 Smart Points
1/3 cup unsweetened applesauce – 0 Smart Points
3 large egg whites – 0 Smart Points
1 cup water
Jell-O Layer:
1 box (0.3 oz) sugar-free strawberry Jell-O – 0 Smart Points
1 cup boiling water
1/2 cup cold water
Topping:
8 oz. fat-free Cool Whip – 3 Smart Points
Fresh strawberries, sliced – 0 Smart Points
Instructions:
Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with non-stick cooking spray.
In a large bowl, whisk together cake mix, applesauce, and egg whites until smooth. Pour batter into the prepared baking dish.
Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
While the cake cools, prepare the Jell-O layer. In a small bowl, whisk together the sugar-free Jell-O and boiling water until the Jell-O dissolves completely. Stir in the cold water.
Once the cake is cool, use a fork or the end of a spoon to poke holes all over the top of the cake. Slowly pour the Jell-O mixture over the cake, ensuring it gets absorbed into the holes.
Refrigerate the cake for at least 3 hours, or until the Jell-O has set.
Before serving, top the cake with fat-free Cool Whip and fresh strawberries.
Tips:
You can substitute the sugar-free Jell-O with another sugar-free flavor of your choice.
For a richer cake, use whole eggs instead of egg whites, but be aware this will increase the SmartPoints value.
