Ingredients:

  • 1 box of white cake mix
  • Ingredients as per the cake mix instructions (typically water, oil, and eggs)
  • 1 cup chopped strawberries
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup melted unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flakes
  • 1/2 cup white chocolate chips

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Prepare the white cake mix according to the package instructions. Gently fold in the chopped strawberries and pour the batter into the greased baking dish.
  3. In a medium bowl, beat the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth. Drop spoonfuls of this mixture over the cake batter.
  4. Evenly sprinkle coconut flakes and white chocolate chips on top.
  5. Bake for 40-45 minutes, or until the cake is set and the edges are golden brown.
  6. Allow the cake to cool before serving. As it cools, a beautiful cracked, earthquake effect with delightful pockets of cream cheese and strawberry will appear.
