Greek Chickpea Salad Packed with Goodness


2 cups of cooked chickpeas, drained and rinsed
1 diced cucumber
1 cup of halved cherry tomatoes
1/2 finely chopped red onion
1/2 cup of sliced Kalamata olives
1/2 cup of crumbled feta cheese
1/4 cup of chopped fresh parsley
1/4 cup of extra-virgin olive oil
2 tablespoons of red wine vinegar
1 teaspoon of dried oregano
Salt and pepper, to taste


In a large mixing bowl, combine the cooked chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour this dressing over the salad ingredients.
Gently toss the salad until all ingredients are well coated with the dressing.
