Cheesy Beef Enchiladas

These delectable cheesy beef enchiladas are crafted with taco-seasoned ground beef and cheese, rolled into tortillas, and baked in rich red enchilada sauce until hot and bubbling.

Ingredients:

  • 1.5 lbs ground beef
  • 2 oz taco seasoning (2 packets)
  • 1 small onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1 lb cheddar cheese, freshly grated (divided)
  • 1 lb Monterey Jack cheese, freshly grated (divided)
  • 6-8 medium tortillas
  • 20 oz red enchilada sauce
  • Fresh parsley or cilantro for garnish (optional)
  • Sour cream (optional)

Instructions:

  1. Heat the oil in a large skillet and sauté the bell pepper and onion for 5 minutes.
  2. Add the ground beef, breaking it into small pieces, and cook until browned. Drain the excess grease and follow the instructions on the taco seasoning packets, using two packets for 1.5 lbs of beef.
  3. Turn off the heat and mix in the enchilada sauce and a portion of the shredded cheese. Stir until well combined.
  4. Evenly distribute the beef mixture into the center of each tortilla. Roll them up and place them seam-side down in a greased baking dish.
  5. Pour additional enchilada sauce over the rolled tortillas and top with the remaining shredded cheeses.
  6. Bake at 350°F for about 20-25 minutes, or until the cheese is melted and the edges are hot and bubbly.
  7. Allow to cool slightly, garnish with parsley or cilantro, and serve with sour cream.
