Vegan Chicken Fried Steak

Distinguishing between country fried steak and chicken fried steak lies in the coating and accompanying gravy. While akin, country-fried steak boasts a flour coating and is served with onions and brown gravy. On the other hand, chicken-fried steak features eggs in the breading and is accompanied by a creamy gravy.

To render it vegan-friendly, carve seitan slices (utilizing two loaves of Gusta Seitan Roast Classico), whip aquafaba in lieu of eggs (for insights on aquafaba, refer to this video), and prepare the chicken fried steak seitan following the traditional cooking method (outlined below). In the absence of Gusta’s vegan offerings, one may also utilize the Seitan recipe in my vegan cookbook!

Vegan Chicken Fried Steak Ingredients:

Seitan (Gusta Seitan Roast recommended)
Aquafaba
Unsweetened soy milk
All-purpose flour
Baking soda
Baking powder
Sea salt
Garlic powder
Onion powder
Paprika
Cayenne pepper
Black pepper
Oil

For the Country Gravy:

Vegan butter or margarine
Unbleached all-purpose flour
Garlic powder
Unsweetened soy milk
No-beef bouillon cube
Black pepper

Vegan Chicken Fried Steak Instructions:

In a shallow, wide dish, combine aquafaba and soy milk. Set aside.
In another shallow, wide dish, mix flour, baking soda, baking powder, salt, garlic powder, onion powder, paprika, cayenne pepper, and black pepper.
Individually coat each slice of Gusta Seitan Roast in the flour mixture, ensuring a thorough coat on both sides.
Dip the seitan into the soy milk mixture, then dredge again in flour, pressing firmly on both sides.
Place the coated seitan steaks on a wire cooling rack and let them rest for 10 minutes.
Heat oil in a large frying pan to 325F.
Fry coated steaks until golden brown on both sides.
For the Country Gravy, melt vegan butter, whisk in flour and garlic powder until browned, then slowly whisk in milk and bouillon cube until thickened. Season with salt and pepper to taste.
This sumptuous “chicken” fried steak meal stands delectable on its own or accompanied by a vegan side dish like green bean casserole or vegan bacon brussels sprouts.
