Lemon Strawberry Pen


  • 3 cups of milk
  • 1 cup of condensed milk
  • 1/2 cup of powdered milk
  • 1/2 cup of cream cheese
  • 1/4 cup of lemon juice (seedless)
  • 1 tablespoon of lemon zest
  • 1/4 cup of vanilla cookies
  • Crushed vanilla cookies (to taste, for decoration)


  1. Prepare the Milk Mixture:
    • In a pot, heat the milk, condensed milk, and powdered milk together. Stir constantly until the mixture comes to a boil. Remove from heat and let it cool slightly.
  2. Blend the Ingredients:
    • In a blender, combine the slightly cooled milk mixture with the cream cheese, lemon juice, lemon zest, and 1/4 cup of vanilla cookies. Blend until smooth and well combined.
  3. Assemble the Pens:
    • Pour about 3 tablespoons of crushed vanilla cookies into the bottom of each plastic bag or mold.
    • Fill each bag or mold with the lemon mixture up to 3/4 of its capacity.
  4. Freeze:
    • Place the filled bags or molds in the freezer and let them freeze until the mixture solidifies completely.
  5. Serve:
    • Once frozen, serve the lemon strawberry pens well chilled. Decorate with additional crushed vanilla cookies if desired.
