Mini loaded baked potatoes are baby potatoes baked in olive oil and salt, then topped with cheddar cheese, sour cream, chives, and bacon bits.

1-1.5 Pounds Baby potatoes
2 Tbs Olive oil
Salt (to taste)
1/4-1/2 Cup Cheddar cheese, hand-shredded
1/4 Cup Sour cream
1/4 Cup Bacon bits
1 Tbs Chives

Preheat the oven to 400°F.
First, clean and dry the potatoes, then place them on a baking sheet. Drizzle them with olive oil and sprinkle with salt.
Rub the olive oil and salt evenly into the skin of the potatoes.
Next, bake them in the oven until they are fork-tender, which should take about 20-30 minutes, depending on the size of the potatoes.
Allow them to cool slightly, then cut a V-shape into the center of the top and carefully remove it along with some of the filling.
Add the shredded cheddar cheese first, allowing it to melt slightly into the warm potato.
Finally, add the bacon bits and chives. Enjoy!
