Salsa Verde Meatballs


1 pound ground beef
½ cup panko breadcrumbs
¼ cup grated Parmesan cheese
1 large egg, beaten

1 (14.5-ounce) can diced tomatoes, undrained

In a large bowl, combine the ground beef, panko breadcrumbs, Parmesan cheese, egg, and cilantro. Mix gently with your hands until just combined. Season with salt and pepper.
Form the mixture into 1-inch meatballs.
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes per side.
Drain any excess grease from the skillet. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in the diced tomatoes, salsa verde, tomato paste, and oregano. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the meatballs are cooked through and the sauce has thickened. Season with salt and pepper to taste.
Serve the meatballs and sauce over cooked pasta.


You can use ground turkey or ground chicken instead of ground beef.
If you don’t have panko breadcrumbs, you can use regular breadcrumbs.
You can also add other vegetables to the sauce, such as green peppers, mushrooms, or zucchini.
For a spicier sauce, use a hotter salsa verde.
