Golden Chicken Taquitos


  • 3 cups shredded chicken
  • ½ cup salsa negra, hot sauce, or other smooth sauce
  • 16 6-inch corn tortillas
  • 1 ½ cups corn oil or other neutral vegetable oil
  • Salsa, sour cream, and Cotija or shredded cheese for garnish (optional)


  1. Mix the shredded chicken with the salsa or hot sauce.
  2. Heat the oil in a large frying pan over medium heat.
  3. Put a tablespoon or two of the shredded chicken mixture in a thin rectangle on the first third of a tortilla.
  4. Roll up the tortilla tightly and secure with a toothpick.
  5. Fry the taquitos in batches for 1-2 minutes per side, or until golden brown.
  6. Drain on a paper towel-lined plate.
  7. Serve with your favorite toppings.
