Ingredients:

2-3 ripe bananas (mashed)
1/2 cup unsalted butter, softened
3/4 cup granulated sugar (or brown sugar for a richer flavor)
1 large egg, beaten
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract

Optional add-ins:

1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips
1/2 cup raisins

Instructions:

Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mash the bananas until smooth.
Using a hand mixer or stand mixer, cream together the softened butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. 6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix!
Fold in your optional add-ins, if using.
Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Tips:

For extra moist banana bread, use very ripe bananas with lots of brown spots.
If you don’t have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
Want to add some extra flavor? Try adding a teaspoon of ground cinnamon or nutmeg to the batter.
Enjoy your delicious homemade banana bread!
