Crispy Butter Chicken

Ingredients:

  • 2 large eggs, beaten
  • 1 cup Ritz cracker crumbs
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • 4 boneless, skinless chicken breasts (6 ounces each)
  • ½ cup butter, cut into pieces

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In two separate shallow bowls, place the beaten eggs and the cracker crumbs.
  3. Mix the cracker crumbs with garlic salt and black pepper.
  4. Dip each chicken breast in the beaten eggs, then dredge them in the crumb mixture to coat evenly.
  5. Arrange the coated chicken breasts in a 9×13 inch baking dish.
  6. Place pieces of butter on top of each chicken breast.
  7. Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown.

Notes:

  • Adjust cooking time if using chicken breasts larger than 6 ounces each.
  • For flavor variations, consider adding Cajun or Italian seasoning to the crumb mixture, or mixing garlic powder with melted butter to pour over the chicken before baking.
  • Serve with your choice of sides like roasted vegetables, mashed potatoes, mac and cheese, or coleslaw.
