Crispy Butter Chicken

Ingredients:
- 2 large eggs, beaten
- 1 cup Ritz cracker crumbs
- ½ teaspoon garlic salt
- ¼ teaspoon black pepper
- 4 boneless, skinless chicken breasts (6 ounces each)
- ½ cup butter, cut into pieces
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- In two separate shallow bowls, place the beaten eggs and the cracker crumbs.
- Mix the cracker crumbs with garlic salt and black pepper.
- Dip each chicken breast in the beaten eggs, then dredge them in the crumb mixture to coat evenly.
- Arrange the coated chicken breasts in a 9×13 inch baking dish.
- Place pieces of butter on top of each chicken breast.
- Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown.
Notes:
- Adjust cooking time if using chicken breasts larger than 6 ounces each.
- For flavor variations, consider adding Cajun or Italian seasoning to the crumb mixture, or mixing garlic powder with melted butter to pour over the chicken before baking.
- Serve with your choice of sides like roasted vegetables, mashed potatoes, mac and cheese, or coleslaw.
