Decent pancake recipe | quick and easy |

Outstanding!! I’m 6 months in on WW, down 45 lbs. and could NOT find a decent pancake recipe that didn’t take half an hour to put together. These are quick and easy – cook, look and taste just like regular pancakes!

Ingredients:

1 cup old-fashioned oats
1 ripe banana
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
Pinch of salt
Optional: cinnamon, blueberries, sliced strawberries, or chopped nuts for added flavor

Instructions:

Blend Ingredients: In a blender or food processor, combine the oats, banana, eggs, baking powder, vanilla extract, and salt. Blend until smooth and well combined.
Preheat Griddle:Heat a non-stick griddle or skillet over medium heat. Lightly coat with cooking spray or a small amount of oil.
Cook Pancakes:Pour about 1/4 cup of the pancake batter onto the hot griddle for each pancake. If desired, sprinkle some cinnamon, blueberries, sliced strawberries, or chopped nuts onto the pancakes. Cook for 2-3 minutes, or until bubbles form on the surface of the pancakes and the edges start to set. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
Serve:Transfer the pancakes to a plate and serve warm with your favorite toppings such as maple syrup, Greek yogurt, or additional fruit.
