1 (15-ounce) can chickpeas, drained and rinsed
¼ cup tahini
¼ cup lemon juice
2 tablespoons olive oil
2 cloves garlic, minced
½ teaspoon ground cumin
½ teaspoon salt
2-3 tablespoons cold water, or as needed


Combine the tahini and lemon juice in a food processor and process for 1 minute, scraping down the sides as needed. This helps to “whip” the tahini, making the hummus smoother.
Add the chickpeas, olive oil, garlic, cumin, and salt to the food processor and process until almost smooth, scraping down the sides as needed.
With the motor running, slowly drizzle in 2-3 tablespoons of cold water until the hummus reaches your desired consistency. You want it to be creamy but not runny.
Taste and adjust seasonings as needed. Serve immediately with pita bread, vegetables, or crackers.


For an extra-smooth hummus, remove the chickpeas from their skins. To do this, soak the chickpeas overnight, then simmer them for 1 hour or until tender. Once cool, gently rub the chickpeas between your fingers to loosen the skins. The skins will slip right off.
If you don’t have tahini, you can substitute an equal amount of peanut butter, but the hummus will have a slightly different flavor.
Hummus can be stored in an airtight container in the refrigerator for up to 5 days
