Golden Potato Tacos

Ingredients:

  • Golden Potatoes: Wash thoroughly and place them in a large pot. Cover with water and boil until tender. Transfer to a plate or bowl and let them cool slightly until they can be handled without burning. Peel and mash with a potato masher.
  • Cheese: Add to the mashed potatoes and season to taste. Mix well and set aside.

Making the Tacos:

Heat the tortillas in a skillet until soft enough to fold easily. Cover with a napkin to keep warm. Place an open tortilla on a flat surface, add a spoonful of the potato mixture, spreading it evenly in the center. Fold the tortilla into a crescent shape, pressing gently to ensure the tortilla adheres to the potatoes. Once all tortillas are prepared, refrigerate them to firm up, making them easier to fry.

Making the Sauce:

Boil tomatoes, onions, garlic, and serrano chili in water until the skins of the tomatoes start to peel. Blend the tomatoes and water until smooth, seasoning with a pinch of salt. In a small saucepan, heat oil, then add the sauce and simmer for half a minute. Pour in an additional cup of boiling water and simmer on low for five minutes. Remove from heat and set aside.

Frying the Tacos:

Prepare a plate lined with paper towels to absorb excess oil. Heat oil in a skillet over medium heat. Fry 3-4 tacos at a time on both sides until golden and crispy. Transfer to the plate with paper towels to drain. Repeat with remaining tacos.

Serving:

Arrange the golden tacos on plates, garnishing with lettuce, radishes, avocado, and a drizzle of sauce. Top with fresh cheese and cream. Serve immediately. Enjoy sharing this delightful recipe!
