  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can tomatoes with green chiles
  • 1 can beef broth (use the tomato can for measurement)
  • 18 ounces (half of a family-size bag) frozen tortellini
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • Additional cheese and chopped green onions for garnish

Step 1: Cook the Beef

Cook one pound of ground beef in a pan and drain all the grease. Add a packet of taco seasoning and stir thoroughly.

Step 2: Add Tomatoes and Broth

Add one can of tomatoes with green chiles, then fill the same can with beef broth and add it to the pan. Allow it to come to a boil. This will not take long.

Step 3: Add Tortellini

Add half of a family-size bag of frozen tortellini (approximately 18 ounces). Let it boil, then cover the pan for 2 minutes. The tortellini will cook quickly.

Step 4: Add Sour Cream and Cheese

Remove the cover and reduce the heat to medium-low. Add 1/2 cup of sour cream and 2 cups of shredded cheese. Stir until well combined and cover until the cheese is melted. This will not take long.
